Grilled Prime Rib with Asparagus

A freshly tossed casear salad and lemon sorbet for dessert.

What you need:

+ 2 slices of prime rib, 3/4" thick
+ 1-2 tsp. lemon pepper
+ 1-2 tsp. minced fresh thyme & sage
+ zest of 1 lemon
Vinaigrette:
+ 4 Tbsp. olive oil
+ 1-2 Tbsp. lemon juice
+ 1/8 tsp. salt
+ 1/4 tsp. ground pepper
What to do:
1. Mix vinaigrette and store in a cool place.
2. Steam asparagus, let cool.
3. Season prime rib and grill until done.
4. Place asparagus on a plate with prime rib; dribble vinaigrette over the asparagus and garnish with lemon peel and herb sprigs

Cabernet Sauvignon, Merlot, Amarone
